Drunken Mussels
(Serves 10)
Ingredients:
- 4 Onions (cubed)
- Olive oil
- 5 cloves of garlic (crushed)
- Pimento (any hot sauce or peri-peri sauce)
- Tomato paste (one small can)
- 2 cans of chopped Tomatoes (Or fresh)
- 2 boxes of Green New Zealand mussels
- 3/4 Cup of Cream
Directions:
- Sauté onions in Olive oil for a few minutes add garlic and continue to sauté.
- Add tomato paste, chopped Tomatoes and Pimento.
- Simmer, then add Mussel.
- Cook until tender, stirring occasionally. Add cream just before serving.
- Serve with fresh crusty bread.

Caribbean Ocean Blue
Ingredients:
1 oz. Blue Curacao
1 oz Coconut Rum
1 oz. Coco Lopez
2 oz. Pineapple juice
Fill a shaker halfway with crushed ice.
Add the Curacao, Coconut Rum, Coco Lopez and Pineapple juice. Shake mixture vigorously. Pour into a cocktail glass and serve.
